These compost cookies are the perfect salty-sweet treat, and the best part is that they are completely customizable! You can use whatever mix-ins you have on hand. Some of my favorites are nuts, chips, chocolate, and cereal!

Can’t decide which flavor cookie to make? Compost cookie is your answer! These compost cookies have the classic cookie dough base with pretty much any mix-ins of your choosing. I personally love a salty-sweet combo with pretzels, potato chips, chewy caramels, and chocolate molasses chips, but feel free to use whatever you have on hand! This recipe makes for thick and chewy cookies that will not disappoint. Give them a try!

Ingredients

  • 2 cups plus 2 tablespoons all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 ½ sticks unsalted butter at room temperature

  • 1 cup packed light brown sugar

  • ½ cup granulated sugar

  • 1 large egg plus 1 large yolk

  • 2 teaspoons vanilla extract

  • ½ cup pretzels, chopped

  • ½ cup salted potato chips, crushed

  • ½ cup caramels, cut into ⅛ inch cubes 

  • ½ cup See’s Candies molasses chips, chopped (or any crunchy cookies such as Heath, Butterfinger, Honeycomb, etc.)

  • Flaky sea salt for on top


Instructions

  1. Preheat oven to 325°F. Line 3 baking sheets with parchment paper.

  2. Combine flour, baking soda, and salt in a small bowl. 

  3. In a stand mixer fitted with a paddle attachment, beat the butter and sugar together until creamy, about 5 minutes.

  4. Add the egg and egg yolk to the butter mixture and beat to combine. Then add the vanilla extract and scrape down the bowl as needed. 

  5. Add the flour mixture and beat to combine. 

  6. Add the pretzels, potato chips, caramels, and cookies of choice and beat to combine. 

  7. Using a 3 tablespoon cookie scoop, scoop the dough onto the baking trays leaving a few inches between each ball. I recommend putting 6 cookies on each tray. Sprinkle each ball of dough with flaky sea salt, if desired. 

  8. Bake for 7 minutes, then rotate the pans and bake for another 7 minutes. Remove them from the oven, and enjoy!
