You just found your new, go-to banana bread recipe! Brown sugar and browned butter make for a rich, nutty flavor that pairs perfectly with banana. It has a crisp exterior and a moist interior that can’t be beaten. You’re going to love it!

As simple as banana bread may seem, it can be deceivingly hard to get the perfect banana flavor and bread-like, but still moist, texture. When I came across this recipe, my banana bread game changed forever. The brown butter brings out a nutty, caramelized flavor that enhances the natural banana and makes for the perfect combination of flavors. It’s so good that it doesn’t even need any add-ins, like chocolate chips or nuts. Sometimes simple is better! The recipe includes adding butter to the top of the loaf just before baking it which makes for a deliciously crispy crust and decadent interior. And unlike other recipes I’ve tried, the texture is perfectly moist and not too cake-like, just as it should be!

Ingredients:

  • 1 3/4 cup flour 

  • 1 1/2 teaspoons baking soda

  • 3/4 teaspoon salt

  • 1 1/2 cup packed light brown sugar

  • 1/2 cup unsalted butter, plus 3 tablespoons (1 for the pan, 2 for on top of the bread)

  • 1 teaspoon vanilla extract

  • 3 large bananas 

  • 3 large eggs

Instructions

  1. Preheat oven to 350°F. Grease a 9 by 5 inch loaf pan with 1 tablespoon of butter, and set aside. 

  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a small saucepan, melt 1/2 cup of butter and gently heat until it’s golden brown and fragrant. Transfer to a large bowl.

  4. To the browned butter, add the bananas, mashed with a fork, the brown sugar, the eggs, and the vanilla. Whisk to combine. 

  5. Add the dry ingredients to the wet and gently fold with a spatula until no dry patches remain. 

  6. Transfer the batter to the pan. Top it with the remaining two tablespoons of butter, broken up and distributed down the center of the pan (long ways). Top with a sprinkle of salt if desired. 

  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Turn on the broiler and bake for an extra 2-3 minutes to get the top extra crispy.

  8. Remove from oven, let cool, slice, and enjoy!
